Curried Swede & Lentil Soup
Fry one chopped onion in some oil until softened, then add minced garlic and ginger (more ginger = more fire, so add to your taste) with whatever spices you fancy. I sprinkled in cumin, garam masala and a smidge of turmeric.
Season with salt and pepper and add 1 cup of red lentils. Fry with the onion base until it starts to take on a different colour and then add your chopped vegetables.
Once all the veg and lentils and onions have embraced one another and are well acquainted add enough vegetable stock to cover everything. Bring to a boil, and simmer gently till all everything is soft and fully cooked.
Blitz with a hand held blender until smooth, and season to taste. I like to add a zest of 1 lemon at this stage and loosen it with some lemon juice too.
Served with generous dollops of yogurt. I also sprinkled some dukkah I had at hand. Delicious!
